With all the local block parties and summer gatherings coming up, we all need a good potluck style recipe under our belts and this recipe for vegetarian cilantro lime rice is perfect for pleasing a large crowd. Rice dishes pair well with most any main course and this recipe packs in a ton of flavor with plenty of fresh spring produce, fragrant herbs, and zesty fresh squeezed lime juice. This colorful rice dish is healthy, hearty, has universal appeal, and (best of all) utilizes inexpensive ingredients. Next time you find yourself in a pinch before a potluck, try this quick to prepare side dish!
Magic Ingredients
1 1/2 cups jasmine rice
2 1/4 cups water
1 red bell pepper
1 bunch of cilantro
6 limes
3/4 cup olive oil
1 small yellow squash
2 carrots
1 can of black beans, cleaned and drained
salt and pepper to taste
Getting Started
1. Place water and rice into a mid sized pot and bring to a boil. Once boiling, turn the heat down to low, cover the pot with a lid, and let cook for 15 minutes or until rice is light and fluffy.
2. While the rice is cooking, chop the carrots, squash, and bell pepper into equal sized small bits and saute in a pan with 1/4 cup olive oil and salt and pepper to taste on medium high heat. Cook for 5 minutes or until the veggies just begin to soften.
3. Once the vegetables and the rice are done cooking, mix them together in a large serving dish. Add chopped cilantro, juice of the limes, the black beans, remaining olive oil, and salt and pepper to taste.
4. Serve and devour!
